Before he received the title of Gaziantep Gazi, Güllü Çelebi, who was doing kebab-cooking with his sons at number 4 in Elmacı Pazarı next to Hacı Nasır Mosque, sets out with caravans to make his pilgrimage to Mecca, which was then the territory of the Ottoman Empire. At that time, he sees the baklava dessert being made and sold in the shops in Antep, the town of Aleppo, and on the road in Aleppo and Damascus, and he wonders and learns all the details. Although baklava is widely known in the palace cuisine, it is a dessert made in many parts of Anatolia, including Antep, but there is no place in Antep that makes and sells baklava in shops.
They have made additions to Antep for years and, with their own unique touches, transform the baklava they learned from there into the current Antep Baklava form.
